Nothing says summer like a tropical chia parfait.
This bright breakfast gets its gorgeous color from dragon fruit, also called pitaya. Pitaya Plus makes ready-to-go frozen dragon fruit smoothie packs that make it super easy to use this exotic ingredient.

INGREDIENTS:
- 1/4 cup chia seeds
- 1 1/2 cups almond milk
- 1/2 cup coconut yogurt
- 1 scoop collagen (We love Vital Proteins)
- 1/4 cup frozen dragon fruit
Smoothie topper (optional):
- 1/2 cup frozen dragon fruit
- 1/2 frozen banana
- 1/4 cup coconut yogurt
- 1/4 cup almond milk
DIRECTIONS:
- Soak chia seeds in 1 cup almond milk for at least 2 hours, stirring occasionally until well absorbed. Add more almond milk if needed.
- Blend dragon fruit with 1/2 cup almond milk until smooth and liquid.
- Separate chia pudding into 2 bowls.
- Stir in coconut yogurt.
- Add half of the dragon fruit mixture to each bowl.
- Add more coconut yogurt to one bowl to achieve a lighter color.
- Blend smoothie topper (optional).
- Layer into a glass, top with smoothie topper and coconut shreds, and enjoy!
